Our Week in Meals #17

Satisfied Sunday, pals! I’m checking in right now with yet another roundup of Our Week in Meals!

For individuals of you who are new all around here, this is in which I share a tiny bit about what we’ve been up to over the past week — as it relates to our meals every single night. I hope that this series gives you a glimpse “behind the scenes” at some highlights from our lifestyle, shows you how I stability a occupied schedule with feeding my family, and gives a couple of new ideas for your very own weekly meal program.

It wasn’t our finest week close to right here — from a case of the flu to a week-lengthy business trip, there had been some days that felt like comprehensive chaos. Gibbs woke up with a fever of 102 on Sunday morning, so needless to say, we stayed shut to residence that day. A smoothie sounded great to the sick patient, so all 3 of the boys had Chunky Monkey Protein Smoothies for breakfast. I have even been able to sneak in a couple of handfuls of infant spinach when creating this smoothie not too long ago, and the boys don’t even recognize. WIN!

If you adhere to me on Instagram, you also watched me make some healthful snacks that morning! I wished one thing that we could keep in the fridge for the duration of the week to just grab and go. Because I’ve had a bag of dried blueberries in the pantry from Costco for ages, these No-Bake Blueberry Almond Power Snacks were born. And significantly…they are SO excellent. Keith and the boys all gave them two thumbs up…and then proceeded to consume virtually the whole batch in one day! They need only five elements and no baking, so I can assure you that these will be a staple in our kitchen. This week I’m going to try out a peanut butter chocolate chip edition (per Gibbs’s request)! You can see the total recipe Here.

The weather was warm and sunny, so the younger two played with water guns although Keith washed his car and Gibbs observed from the sidelines!

There was some Frisbee-throwing involved later that afternoon…

For dinner Keith grilled a range of sausages that I picked up at Complete Food items, which I served with cornbread and roasted veggies. Hit the spot!

And then Monday morning rolled around and Keith jetted off on an international enterprise journey for the week.  The boys were off from college for the President’s Day holiday, but our only outing that day was a trip to Charlottesville for an appointment at the pediatrician’s. Gibbs went to bed with a fever of 104 on Sunday evening and a hacking cough, so I wished him checked just to be confident he didn’t want any special therapy.

While Gibbs rested within for most of the afternoon (binge-viewing previous Indiana Jones motion pictures on Amazon Tv!), Casey and Spence spent just about every waking hour outdoors.

I served five-Ingredient Dump-and-Bake Chicken Teriyaki with rice and steamed veggies for dinner (recipe coming soon), which was great!

Gibbs stayed home from school on Tuesday, but I knew he was feeling much better when he requested this combo for snack (and proceeded to eat about three servings). He loved becoming an only child for a couple of hours that morning, as well — with total handle in excess of the Tv remote and my undivided focus.😊

We had been a handful of minutes early to pick up Spencer from preschool at lunchtime, so I wandered by way of this tiny vintage store on Principal Street named Indigo Gypsy. I left empty handed, but they had a good deal of fun furniture, vintage garments, and antique decor.

Dinner was a new recipe that I’m so excited to share with you guys! This Dump-and-Bake Cajun Chicken Pasta is critically gooooood. Recipe coming soon!

On Wednesday Spence and I made a Costco run and then picked up a grocery buy at Harris Teeter. Tip: to keep squirmy preschoolers quiet in a shopping cart, feed them lunch! I packed Spencer’s peanut butter sandwich and timed our journey so that he could eat even though I piled stuff into the cart about him. It stored us each happy!

I made a batch of my Cheddar, Chive &amp Bacon Biscuits that evening, which I stashed in the freezer for a later brunch. Have you attempted these nevertheless? They’re based mostly on my dad’s biscuits that I grew up with. Such a part of my childhood (and the biscuits only get about 15 minutes to prep)!

For dinner we had one of the youngsters’ favorite meals: quesadillas. The boys ate plain cheese quesadillas, while I stuffed mine with sauteed bell peppers, onion, and leftover chicken. Served with avocado, constantly!

Thursday was relatively uneventful. I walked with four of my girlfriends in the morning although the tiny ones have been in preschool, acquired some function accomplished, and completely LOVED the 75 degree weather! Alternatively of my typical sizzling tea or coffee to preserve me warm in February, I was sipping on this new-to-me vanilla seltzer. It may possibly sound odd, but this was SO excellent — it reminded me a good deal of a classic cream soda (minus the sugar)!

For dinner I tried a recipe that Aunt Bee not too long ago sent to me. We loved this 20-Minute Chicken Cacciatore with Rice, so I’ll be sharing it on the blog in the coming weeks! Very best of all, the chicken, rice, and veggies all cook collectively in the identical skillet (which indicates easy clean-up). And thank goodness it was straightforward, because by Thursday evening my children had been seriously unraveling. I don’t know if it was the truth that Keith had been gone all week, if they have been exhausted, or if they had a situation of Spring Fever. Whatever the cause, I just know that there have been a whole lot of tantrums, fighting, arguing, and a poor headache for me by bedtime.🙄

Luckily Keith created it back late on Thursday night, so he was residence all day Friday to aid with Spence. I had an early morning appointment at the Chiropractor/Acupuncturist to finally deal with my migraines and some persistent discomfort in my back from a pinched nerve. This was my initial knowledge with acupuncture and I was SO impressed! It was not painful at all, and I noticed some relief proper away. I’ll be going back for normal therapies, so I’m excited to see if it assists.

On my way property from the appointment, I stopped at Mollie’s farm to go for a stroll and to get some physical exercise in the sunshine. The climate was lovely, and so was our scenery!

That evening I took Casey to a birthday party while Keith grabbed pizza with the other two boys. I adore a night off from the kitchen on Fridays!

We tried to go for a hike at Grelen on Saturday afternoon, but the walk was very quick-lived. The storm clouds rolled in as quickly as we left the residence, so we hightailed it out of there as soon as we saw lightning.

As an alternative, we made a fast end at the Somerset Center Shop on the way home…

for some ice cream treats at the indoor picnic table!

We were arranging to grill fish outdoors for supper, but the climate turned out to be cooler and windier than I expected.  Keith wasn’t as well thrilled with the concept of cooking outdoors, so I handled the dinner within rather.

We had fish sandwiches with Margeaux’s Coleslaw (&lt– my go-to recipe) and baked potatoes.

I marinated and then broiled cod for the sandwiches. Gibbs was grumpy and didn’t consume considerably dinner, but Casey, Spencer, Keith and I all imagined that the fish was tasty! Right here’s what I did:

Broiled Cod Fish Sandwiches

  • 1-2 lbs. cod fillets
  • &frac14 cup further virgin olive oil
  • 1 tablespoon red wine vinegar
  • one tablespoon fresh lemon juice
  • one teaspoon minced garlic
  • one teaspoon honey
  • one teaspoon dried minced parsley
  • &frac14 teaspoon salt
  • Pinch of pepper
  • Sandwich rolls and coleslaw for serving
Directions
  1. In a modest bowl, whisk together olive oil and up coming 7 ingredients (via pepper). Pour the marinade into a massive Ziploc bag. Add fish to the bag, gently toss to coat, and refrigerate for at least 10 minutes (but not far more than 1-two hrs).
  2. When ready to cook the fish, preheat broiler.
  3. Location fillets on a greased rack of a broiler pan discard remaining marinade. Broil three-4 in. from heat until finally fish just commences to flake very easily with a fork, 10-twelve minutes.
  4. Serve fish on sandwich buns top with coleslaw!

We spent the rest of the night watching basketball and relaxing, and I’m searching forward to yet another fairly quiet day today ahead of the crazy week commences again. I’ll be back with a total report subsequent Sunday. Have a superb week!
